Grey is a colour, not a breed
Almost every grey cat in Ontario rescue is a domestic shorthair or longhair with a solid blue-grey coat. Solid grey is a dilute of black, which is why it turns up steadily rather than rarely, and why so many grey cats in shelters are unrelated to any pedigree.
The confusion worth clearing up early is the Russian Blue. A great many grey shelter cats are listed as Russian Blue mixes because that is the reference point people have, but a true Russian Blue is uncommon in rescue and has a specific short, dense, silver-tipped double coat and green eyes. If the pedigree matters to you, ask the rescue what the identification is based on. Usually the honest answer is the coat colour and nothing more.
What the coat actually tells you
Very little about temperament, which is the useful thing to know. Coat colour is not a reliable predictor of personality in cats, and any rescue that tells you otherwise is guessing. What predicts how a cat will settle is its history, its age, and how it behaved in the foster home, so those are the questions worth spending your time on.
Grey does photograph better than solid black under shelter lighting, so these cats generally move faster than black cats do. If you see one you like, apply promptly rather than assuming it will still be listed next week.
Living with a grey cat in Ontario
Ordinary domestic shorthair care, with indoor living the sensible default across the GTA and Ottawa given traffic and the urban raccoon population. A longhaired grey needs brushing several times a week; a shorthaired one needs almost nothing beyond a weekly once-over.
